Chef Bassam Esbeit opened Tarboosh in 1989 — before Square One was what it is today. Thirty-seven years later, the hummus is still stone-ground every morning, the shawarma is still turned on charcoal, and a generation of Mississauga families has grown up eating here.

Chef Bassam Esbeit opened Tarboosh in 1989 — back when Confederation Parkway was quieter, the mall had half its current tenants, and "halal Middle Eastern" wasn't on anyone's Google Maps.
He brought the food of his home with him: hummus the way his mother made it, shawarma the way the old spit turners in the souq did it, and a menu short enough to do everything right.
Thirty-seven years later, the menu is still short, the recipes still come from home, and there's still a good chance you'll see Chef Bassam walking the floor during dinner service — asking how the fattoush was, exactly the way he asked in 1989.
