Chef Bassam Esbeit opened Tarboosh in 1989 — back when Confederation Parkway was quieter, the mall had half its current tenants, and "halal Middle Eastern" wasn't on anyone's Google Maps.

He brought the food of his home with him: hummus the way his mother made it, shawarma the way the old spit turners in the souq did it, and a menu short enough to do everything right.

Thirty-seven years later, the menu is still short, the recipes still come from home, and there's still a good chance you'll see Chef Bassam walking the floor during dinner service — asking how the fattoush was, exactly the way he asked in 1989.
